Q: What is Pacotizing®? How does it work?

A: Pacotizing® is Pacojet’s unique process that micro-purées ingredients directly from a deep-frozen state without thawing. All it takes is three simple steps.

  1. Prepare and fill: Prep your fresh ingredients as usual, cut them into pieces and add liquid
  2. Freeze and store: Freeze for at least 24h at min. -20°C (Alternatively, a blast freezer can be used to speed up the freezing process.)
  3. Pacotize® individual portions: For service or mise en place

Q: Why use Pacojet if I already have a blender or food processor?

A: Blenders and food processors are essential tools in every kitchen and are excellent for general preparation.

Pacojet serves a different purpose. It allows kitchens that require very fine, consistent textures to achieve them from frozen ingredients without thawing, dilution adjustment, or sieving.

For many regular kitchens, a blender is perfectly sufficient. For kitchens that value refined texture and portion-on-demand preparation, Pacojet offers an additional capability that these conventional equipment do not provide.
